MITT Boneless

Ingredients (serves 4):

500g MITT Desossado
250g of Carolino or Needle Rice
6 cloves of garlic
2 bay leaves
2 rabbit livers
2 medium onions, peeled
100ml of rabbit blood
100g of fresh Paris mushrooms
1 Chilli, fresh
80g of smoked bacon
Red wine (as needed)
Water (as needed)
Salt (as needed)
Cumin (as needed)
Vinegar (as needed)


In a saucepan, make a stew with oil, chopped garlic and onion, add the bay leaves and chilli, let it soften for a few minutes.

Add the sliced bacon, the sliced mushrooms, the diced liver and let it cook for a few more minutes. Add the rabbit previously cut into cubes, the cumin, and season with salt. Stir until golden on all sides. Add hot water to cover the rabbit, let it simmer, over a low heat, for +/– 25 minutes.

Apart, in a container, add the blood, vinegar and wine. After the rabbit is cooked, add the water, twice the size of the rice, bring to a boil and add the rice. Rectify the seasoning and let it simmer for another 10 minutes. After being cooked add the blood mixture, let it boil for a few seconds to finish.
