MITT Loins


  • 1 pack of Rabbit Loins
  • 1 glass of red wine
  • 3 cloves of sliced garlic
  • 1 bay leaf
  • 1/2 red onion
  • 1 carrot
  • 1 teaspoon of paprika
  • 1 sprig of thyme
  • 200 ml of tomato paste
  • 400 grams of cooked white beans
  • Salt (as needed)
  • Black pepper (as needed)
  • Olive oil (as needed)


Make a marinade with the loins of rabbit: add the red wine, the laminated garlic, the bay leaf, salt and 1 drizzle of olive oil.
Wrap the rabbit well in the marinade and place in the refrigerator for at least two hours.
In a saucepan add 1 drizzle of olive oil, the chopped red onion and the thinly sliced carrot and cook until the onion is translucent.
Add sweet chili and fresh thyme to the casserole dish and mix.
Add the rabbit with the marinade, mix, cover and cook the rabbit.
When the meat is almost cooked, add the tomato pulp, rectify the seasonings and add the white beans.
Envolva e deixe apurar.
