Ingredients (serves 4):
500g of MITT Bifanas
100g of mushrooms, sliced
180g of potato straw
1 bunch of parsley
50ml of olive oil
Salt (as needed)
Cut the MITT Bifanas into thin strips and reserve. Then cut the leek (only the white part) into half moons.
In a frying pan put some oil, let it warm up well and add the leek. Stir well and let it cook for 5 minutes. Add the mushrooms and wrap well.
Add the rabbit strips, add a little olive oil and salt and let it cook until it blushes, stirring from time to time. Add the straw potato, wrap until it softens slightly and add the beaten eggs, stirring well.
Finally, add some chopped parsley and wrap it well.
